Roasted Vegetable and Hummus Wrap

Ingredients:

  • 4 large whole wheat tortillas
  • 1 cup hummus (store-bought or homemade)
  • 2 cups mixed roasted vegetables (zucchini, bell peppers, eggplant, etc.)
  • 1 cup baby spinach leaves
  • 1/2 cup crumbled feta cheese (or vegan alternative)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F (220°C). Toss the mixed vegetables with olive oil, salt, and pepper on a baking sheet.
  2. Roast the vegetables in the preheated oven for about 20 minutes or until they are tender and slightly caramelized.
  3. Warm the tortillas slightly in a pan or microwave to make them more pliable.
  4. Spread a generous layer of hummus over each tortilla.
  5. Arrange a handful of roasted vegetables and a handful of baby spinach leaves on each tortilla.
  6. Sprinkle crumbled feta cheese (or vegan alternative) on top.
  7. Roll up the tortillas tightly to form wraps.
  8. Slice the wraps in half and serve immediately or wrap them tightly in foil for a convenient on-the-go meal.
